I haven't had that much to update you on lately.<br />

We've been less adventurous this past year, going on less hikes, fewer weekend trips, less wineries and breweries. Though we prefer to be more active and experience new things, I've realized that we've settled in to life here in Portland. This is our home. Our adventurous times look different because we are spending more quality time with friends, playing disc golf for hours, spending alone time in our cozy apartment.<br />
<br />
Portland is beautiful, and we still have a ton to see, but we have time. I'm glad to be here, comfortable and content. I think I've worn my raincoat less than 3 times this month... not sure if I'm just used to the rain or if it's been raining less. <br />
<br />
Here are a few things that have been on my mind:<br />
<br />
-Stuff: why do we need it and why am I so good at accumulating it? I know why; I'm a collector, and I'm sentimental about things. But, I've been realizing more lately that they are <i>just things</i>. Heath and I are too practical to get rid of anything we know we could use in the future, but I've been doing a lot of cleaning out and it feels good. <br />
<br />
-Ben Affleck: I was a little disappointed when Argo won the Oscar for best picture... I wished one of the smaller movies like <i>Silver Linings Playbook</i> or <i>Amour</i> would have take it. But I really liked his speech, especially when thanking his wife: "I want to thank you for working on our marriage for 10 Christmases. It’s
good, it is work, but it’s the best kind of work, and there’s no one
I’d rather work with." So true.<br />
<br />
-Goodwill Donation Centers: Recently, I have been going to these centers where you buy by the pound... around $1.59... with my friend Meg. We've mainly been searching for baby clothes for her little girl (come soon E!!! Can't wait to meet you), but I've also found Lucy yoga pants, nice sweaters, and cloth diapers that look like new. I do love a good deal.<br />
<br />
-Valentine's Day: Heath and I choose not to celebrate this holiday. <br />
<br />
-Our next purchase: the Ikea Poang Chair. We've been wanting it for a while... just waiting for the right one to come up on Craigslist. It's nice and modern, and will go nicely with the purple couch.<br />

-2 weddings and a baby: Coming in the next 2 months. One baby making her appearance in a few weeks, making our sweet friends parents. One wedding on my birthday. And one wedding in May that my awesome husband happens to be officiating. Looking forward to this spring for sure.<br />

Though there is no rush to having kids, they (our future children) are on my mind for the better part of my day. While thinking about them, I'm faced with ideas on how to raise them, who to surround them with, experiences to diversify their lives, ect.<br />

And then I think about us, Heath and I, and the things we could start doing differently right now. I know one can never be fully prepared for babies, just like one can never be prepared for marriage; but if we have these ideas, why not try to implement them now?<br />

I've talked about reading this book for some time, and I wish I had a long time ago... then, it might have been harder to read, more challenging, made me feel more uneasy. Now? It's like the author has been in my head for months, writing out my exact thoughts and feelings on church, consumerism, food...<br />

I think her words are especially hitting me hard in this season. Christmas is kind of a hard time for me, receiving so much when many around me have so little. It makes me sad actually. No, I am not a scrooge, I do not mind listening to Christmas music if that's what you enjoy... I enjoy twinkle lights and peppermint sticks. But I'm also very aware and cautious of it all. I just don't want to miss the point of why we celebrate Christmas every year.<br />

So.... This year I decided to have a handmade Christmas. I <i>loved</i> making clutches for the girls in my family this year, and I had an even better time giving them away.<br />

Crafting my gifts this year is one little way to simplify and refocus myself this holiday season. There are basic things in my day-to-day life that I've changed as well: making my own laundry soap, deodorant, basic cooking ingredients... but I'm <i>always</i> open to more suggestions.<br />

I only have 3 more weeks with the kids. Their parents decided to send them to a year-round school, which takes place M-F 8:30-3:00. So, my help is no longer needed.<br />

For one year and 8 months, I have been with Tristan and Trinity. We've been through barely walking to running, cribs to big girl beds, potty training, more potty training, writing single letters to full names, countless play-dates. . . so many things. I tried to provide them with new experiences to grow and learn. And in turn, I learned a great deal from them. They are just little people who love me so much, and I love them.<br />
<br />
Saying good-bye to my everyday life with them is going to be tough.<br />

It's not entirely sad though. Nannying full-time has it's high points, but definite lows as well. Those lows have been wearing on me, and I'm pretty sure this change needed to happen anyway. :) Heath will be graduating in August (woohoo!!!) so we're both on the job hunt. I know I want to work with kids... that's all I know for now. </div>

I'll be honest, Heath and I don't do a lot of exciting things during the winter. It's usually cold (40-50), rainy, and mildly windy. Winter activities are a little out of our price range, and we don't own chains for the car. </div>

Heath is coming with me to work tomorrow. I always love those days because we get to have a "trial-run" of how we'll work together as parents. It's usually helpful and always a lot of fun!<br />

--Tristan and I were discussing what we could do with Mr. Newton on Friday. Eventually, he asked me if we had kids, implying that he wanted to have a play-date with them too. I replied "No, not yet". To which he responded, "Well. . . I can be your kid, Katie! I can stay with you guys 3 days a week, and with mommy and daddy the rest. I just love you four so much!" (referring to his mommy and daddy, and Mr. Newton and I) Ha! Tristan definitely makes my days interesting.--<br />

Cherry trees have started to bloom here. Unfortunately, it's the beginning of February. The weather has been unseasonably dry and warm... not that I'm complaining, I'm just hoping our spring and summer flowers and berries will come in as they should.<br />

b. Speaking of berries, my <i>favorite</i> thing to do up here is go berry-picking. Whether I'm with the kids, a friend, or by myself, I seem to find a lot peace at the farms. I am thankful for the farmers who work so hard to provide quality, reasonably priced products ($1.50 per lb. of raspberries, blueberries, strawberries, blackberries, or marionberries).... mmmm I can't wait for June. (I tried to freeze several pounds of berries this summer, <i>but</i> I ate all of them before they could make it into my freezer.)<br />

c. I've taken 11 baths within the last 6 days. Let's just say I've been a little under-the-weather, but I'm finally getting better!!! Heath hasn't picked up this terrible cold yet... keep your fingers crossed.<br />
<br />
d. Putting together my mom's book for Christmas was one of my favorite things. Receiving emails from her friends (really, I consider most my friends too!), reconnecting with people I hadn't talked to in years, and being reminded constantly that we are loved and supported was an immense blessing. thank you for contributing.<br />
<br />
e. I chose to focus on three activities for the new year. <i>Running, Reading, and Cleaning.</i> I recognized I wasn't very intentional with my alone time last year for many reasons, so I wanted to concentrate on things that would make me feel better <i>and</i> be better. Reading is my favorite thus far. I'll be running a 1/2 marathon in July.<br />

f. <i>Kisses from Katie</i> was such a beautiful story. I literally couldn't put the book down. It made me aware of the types of things and people Heath was surrounded by during his time in Africa. Loved it, highly recommend.<br />

g. I'm a non-fiction kind of gal. I don't mind if it's heavy or sad, I just want to be able to understand the majority of what I'm reading :) Got any suggestions for me???<br />

h. Trinity (2 yrs. old) and I were talking about our nearing play-date today, and I asked her if she was excited about playing with Ellie... "No thank you, Katie. I just want to be with you. You's my favorite."

i. Most of you are probably aware of this already, but I am a <a href="http://pinterest.com/">Pinterest</a> fan. I'm on pinterest more than facebook for sure. The creativity and visual interest bring me in every time.<br />

j. Heath is awesome. How lucky am I to have such a sweet husband who works to understand me and grow with me. I am really thankful for his strength and love for me.<br />

k. Tristan refers to Heath as "that big, tall, silly guy". The kids love Heath so much and they've only been around him a handful of times. I guess they think he's pretty great too.<br />

l. I am currently reading <i>The Happiness Project</i>. A friend gave it to me to read one year ago. I was not in a place where I was capable or ready to hear it's message. Now, I am pleased to say that I am capable and <i>very</i> ready to work on being happy and growing daily. And that feels good.<br />

2. Yesterday I heard thunder and immediately stopped what I was doing... NW Oregon is not often graced by thunderstorms. Let's just say I haven't heard thunder for a whole year. I was a great treat to sit on our porch and listen, a nice reminder of home. <br />

3. Since April I have had dizzy spells on the barge (at work). This concerned me for a while until I realized it's boating season and the barge is slightly affected by wake caused by the hundreds of boats that pass daily. (just so you know, it didn't take me long to figure that out!)<br />
<br />
4. The farmer's markets have been open for the past two months and we are soooo happy to see them again. I'm taking the kids to Sauvie Island later this week to the "you-pick" farms. Due to all the rain (it's been a <i>long</i> spring), all the crops are running several weeks behind, but hopefully there will be some strawberries to pick! <br />
<br />
5. I have lots of pictures to share, but first I have to figure out the new blogger. Lots of things have changed during my break from the blog. Pictures include: cute kids, recent hikes, friend getaway over Memorial Day weekend, our apartment, Mom, Aunt Lynn, and Heather's visit, and recent crafts. Stick around, they'll be posted soon... <br />

6. Recently, I've been thinking a lot about our future kiddos. I attribute most of this obsession to the line of work I'm in. I love my job, feel exhausted at the end of everyday, but it is completely worth it. We have names for two of our kids; Heath thinks we have three, but I am strongly opposed to naming one of our kids "Flora". Please back me up on this people. We don't plan on having kids anytime soon, it just excites me to think about what our future might look like in the next 5 years. <br />
<br />
7. My family has gone through lots over the past several months, and I'm so glad I'm on this side of it now looking back. There have been and will be major changes, and it's hard to picture what my time will look like when I go home for Christmas this year. It will also be the first time to visit Tennessee without my granddaddy Daniels around. I have missed his laugh lately...<br />
<br />
8. This can be held accountable for most of my depressed feelings lately.... we had our first 80 degree day this weekend, and have had only a handful of days in the 70s this <i>whole year</i>. Thus, the sun has not been around for a while. Not trying to complain... I still LOVE living here and am blessed to be surrounded by beautiful scenery daily. We are now recognizing though, the importance of a Hawaiian getaway, which we will be taking Spring of 2012. Good solution, huh?!?<br />

9. Couponing. I'm not going to be the extreme couponer like the ones featured on TLC's tv series. I have been buying Sunday papers though, and follow 2 blogs that basically do all the work for me. I'll post more on this topic later; we did save $30 on last nights grocery bill solely due to my couponing! It feels nice to save our family money. <br />

<br />I slept in, watched my favorite morning shows with a cup of chai latte, and enjoyed my quiet morning. Heath and I shared lunch and desserts downtown, then headed south for a hike we've been wanting to do for a while now.

It's my birthday month, the beginning of Spring blooms, the reopening of my Etsy shop, a girls trip to the beach, a relocation for our church, one more snow shoeing hike (hopefully), and one month closer to my mom's visit. :)

Terrible, in fact. And I've found myself wishing that this week had never happened so things could just be normal. But that can't happen, and in retrospect, I'm glad about this.

<br />You see, even through the most difficult of times, God still blesses us with lots of positives. I'm really happy I'm beginning to see those.
<br />
<br />1. I've been blessed to see several beautiful sunrises this week, which seems a bit abnormal for this time of year.... I guess they always happen, but there's usually thick layers of fog blocking my view.

<br />3. After doing 4 loads of the kids laundry at work yesterday, I dreaded coming home to do ours. When I arrived, I found all my clothes neatly folded on the bed, and the laundry hamper empty. Thank you, Heath. You have no idea how much I appreciate your help. (oh, and he did the dishes. :)

<br />4. This week has brought an overwhelming presence of love from my past and present friends and family. It's so nice to receive these texts, emails, and phone calls. What a blessing to know how much we are loved and cared for.
<br />
<br />5. Mt. Hood has been hiding for a while, but I've seen her 3 times this week from the barge. What a beautiful sight.

<br />6. The kids decided not to take naps yesterday. (Why, oh Why?!? No, that is definitely not the positive.) I think Shirley (their mom) noticed my stress levels were high, so yesterday afternoon we did something abnormal. We danced around the kitchen and made chocolate iced cupcakes. It was magic. And, we each got our own spatula to lick at the end. Tristan got the whole bowl and paddle... I'm glad I wasn't there to put him to bed :)

<br />7. Last Thursday, I used my JoAnn's coupons and bought supplies for watercolor painting. I was debating on whether or not to keep the set... I'm glad I did. It's provided a good outlet for me this week. You should try it...

<br />8. I'm finally starting to feel comfortable in my job. I didn't think nannying was beneath me, I just never expected to be doing something like this. My full-time job is being a mom to these two kiddos, and you know what? I'm pretty darn good at it. I love taking care of them and receiving their sweet hugs and kisses each day. I am so thankful for this family.

A trip down south was greatly appreciated, and I was blessed to land my nanny job the day we left for Franklin. What are the odds? It was a wonderful trip, filled with good eats, time with family and friends, and memorable sight-seeing as always.
<br />
<br />Much to my dismay, Heath and I decided not to purchase a christmas tree this year, or put up Christmas decorations for that matter. Being gone the week of Thanksgiving, then spending three weeks in Texas, our tree would be dead and sorry looking by the time we got back. I was sad about this, but there's always next year. My parents had quite a pretty tree to admire though....

It was mildly depressing when we came home to vegetable plates and pasta dishes. If you live in Franklin, please go eat at Wild Ginger for me!!! I'm begging you.... get the Skittle salad and the Firecracker sushi. Then call me and tell me how good it was. I want someone to enjoy it if I can't. SO GOOD.

<br />So, if you've never been to downtown Franklin, you should stop what you're doing and just go now. Walking down Main St. continues to be one of my favorite things to do while I'm home. The stores have changed overtime, but the buildings have so much character and it reminds me so much of my childhood. I liked this store window... it reminded me of Anthro.

<br />We were lucky enough to see gmom and gdad twice while we were in town. We spent a day with them alone right before we left. Granddad was much more talkative this day with out so many people around. We shared lots of laughs and special moments together. And took this wonderful picture...

<br />On one of the non-rainy days (yes, the rain followed us from Oregon), mom took Heath and I to Radner Lake in Brentwood. I loved taking pictures and enjoyed the sunny sky. It was a good day.

Yes, that's right, a barge... really it's a large houseboat, but it's fascinating for sure. Yesterday was my first day! Pray that I transition smoothly into this full-time gig, and that the kids warm up to me quickly. I'm really excited and blessed to be working for such a lovely family!

One day a year, they have free admission to the gardens! I normally costs $9.50 per person, so we jumped at the chance to go. Though crowded, rainy, and cold, we enjoyed ourselves thoroughly!

<br />The Japanese Garden is located next to the International Rose Test Garden that I have mentioned before. I've been told it's a great place to go for the whole day, to meditate and appreciate natural beauty. Going on a free day, we experienced the beauty... not so much the peace and quiet though. :)

<br />1. Two weeks ago, Heath and I attended a marriage seminar in Seaside, OR. Overall, it was a great getaway and really encouraged us to keep growing and learning more about each other. We stayed for the whole six hour seminar (which was a bit lengthy if you ask me), and were then awarded with a free hotel stay by the beach. Not too shabby, eh? Anyway, there was a swing set on the beach...

<br />4. I love Trader Joe's! We have one about 5 minutes from our house and I visit it often. It's not a place for staple grocery items, but I buy my meat and specialty things there for sure. They also have the most beautiful, <span style="font-style:italic;">afforable</span> flowers! I purchased this lovely bouquet for $4.99 a few weeks ago.

<br />5. I've had a good week in Etsy sales. One of my magazine inserts was featured on the Etsy email last Friday, and by Saturday, I sold all of the files I had! Wonderful, but I wish I had more in stock now. (If you have been hanging on to any magazine inserts, I'd love to take them off your hands!) Anyway, I am now the proud owner of <span style="font-style:italic;">lots</span> of these beautiful rose buds... they are small and adorn the ear beautifully. These would be lovely stocking stuffers. :)

(We are celebrating Christmas with my family during Thanksgiving this year and I am so excited to be in Franklin again!) I suggest that you start your Christmas shopping as well. Shoppers tend to be more anxious and crabby during the holiday season, so finish it before you're stressed like the rest of them!

<br />9. I love Heath. He's my best friend, and I'm glad I can share this journey with him. It's been fun.

<br />If you've ever met my granddad, you know that he is a wise and faithful man. He has always welcomed company and warm hugs, and loves to laugh often. He's gone through quite a few changes the past 3 years or so, but I've watched him transform into a more patient, kind hearted individual, and I love him dearly for that.

<br />Take a moment to pray for him, and these 82 years he's graced this earth. I never knew how much I could love this man, but I do. A lot. And I miss him, so much. Can't wait to see you in two weeks, granddad. Looking forward to my hug!

Since August 31, I have been washing my hair with baking soda and an apple cider vinegar mixture and have been pleased with the results. I have been even more pleased with my other recipe, though.... Homemade Deodorant.

<br />I know, I know. This sounds even more crazy and over the top, but I am so glad I tried it! After researching the harmful effects of some store-bought deodorants containing aluminum, I wanted to find a healthier and cheaper alternative. It has always been difficult for me to find one that actually works, so this was another experiment that seemed worth trying.
<br />

<br />5-6 tablespoons coconut oil*
<br />1/4 cup baking soda
<br />1/4 cup cornstarch
<br />A few drops essential oil (optional, I used about 8 drops of tangerine oil)
<br />
<br />Whisk the baking soda and cornstarch together. Slowly add the coconut oil and work it in with a spoon until it maintains a deodorant-like consistancy. (This takes a few minutes, just be patient.) I decided to add a few drops of essential oil, but the coconut scent is also pleasant. You can either scoop it into your old (clean) dispenser or place it in a small container with a lid (which I did) and apply with fingers with each use. I had a bit left over, so I did both. If you choose to use your old dispenser, you will need to keep your deodorant in the fridge. Just think of it as a nice conversation piece for your guests. :)
<br />
<br />I am so pleased with this recipe! It keeps me smelling fresh all day long and has not left any residue on my clothes. Here's a few recommendations if you choose to try this for yourself:
<br />1. Coconut oil can be found at Whole Foods, CVS or Walgreens, or online. It can be fairly expensive, but it can be used for many things, and will last you through 4-5 deodorant recipes. (I bought mine at Whole Foods and paid $12.00. I also bought my essential oil at WF for $4.00.)
<br />2. I had irritation on my skin for several days and believe it was caused by putting the deodorant on right after shaving my arms. Now, I try to shave my arms at night time, and have not experienced any more skin irritation.
<br />3. I would not suggest wearing this with silk tops. At least wait until the deodorant has dried, which usually takes about 5 minutes for me.

<br />I've really enjoyed having my Etsy shop open. I've made 14 sales in my first month. (7 went to my new friend, Amy. But, they still count! :) I will be restocking my shop with lots more flower earrings in the next few weeks as well. Keep me in mind for Christmas, birthday gifts, and bridesmaid gifts!

In my opinion, everything this lady touches is gold... she also uses Anthropologie gadgets and dishes in her kitchen, so she's a smart one too. :)

<br />Pasta Primavera is a really simple, healthy meal. This recipe combines my two favorite things. Vegetables and Pasta. Love it. Just know you will be chopping away in the kitchen for a good twenty minutes. It's worth it! Trust me.

<br />Here's what you'll need:
<br />1 pound farfalle (bowtie pasta)
<br />3 carrots, peeled and cut into thin strips
<br />2 medium zucchini or 1 large zucchini, cut into thin strips
<br />2 yellow squash, cut into thin strips
<br />1 onion, thinly sliced
<br />1 yellow bell pepper, cut into thin strips
<br />1 red bell pepper, cut into thin strips
<br />15 cherry tomatoes, halved
<br />1/4 cup olive oil
<br />Kosher salt and freshly ground black pepper
<br />1 tablespoon dried Italian herbs
<br />1/2 cup grated Parmesan
<br />(I opted out on the onion this time, because the husband doesn't like them. I'll add them in next time... shhh!)
<br />
<br />Steps:
<br />1) Preheat your oven to 450 degrees.
<br />2) In a large bowl, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Half the vegetable mixture; transfer the mixture to two heavy large baking sheets and arrange evenly over the baking sheets. (I tried using a flat cookie sheet... big mistake. Use a pan that has sides so the oil won't drip in your oven.) Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 8 minutes, about 15 minutes total. (Mine browned more quickly than the original recipe, but our oven has it's quirks... just watch yours closely!)
<br />3)Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving about 1/2 cup of the cooking liquid.
<br />4)Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

<br />Well, we went on my new favorite hike on Monday. I'm pretty sure my favorite hike will change frequently, especially this time of year. I guess it's a good problem to have... too many hikes that you love! :)
<br />
<br />We explored Silver Falls State Park (aka Trail of Ten Falls) with a new friend named Jerrod. This will definitely be on our list of places to take visitors! The park is usually busy, but since we went on Monday, and a fairly chilly afternoon, we basically had it all to ourselves. Wonderful!
<br />
<br />Hike highlights: good company, we saw a crane, waterfalls, and mushrooms! This land is plentiful of thousands of mushrooms, big and small.

<br />Friends, meet our new friend Jerrod. He also attends Pacific University with Heath and is studying Counseling Psychology. He kindly invited us to go on this hike with him and briefly showed us around his hometown, Salem. He even treated us to dinner at a roadhouse... I had bbq! Thanks Jerrod.
